Directions

In a Large saucepan (4-6 qt), sauté 4 cloves garlic in olive oil on low to medium heat (and salt pork-if you can find it) (remove and discard)

In the same pan, cut up 6-8 Fraboni's Garlic Sausage in thirds, then brown (remove and set aside). In the same pan, cut up beef roast (1 lb) in 2-3 inch squares and brown (can use beef neck bones).

While browning beef, add 1 teaspoon cloves. When beef is brown, remove and set aside) Fine Dice 1 onion, 2 celery sticks and 2 carrots, and sauté in same pan as meat.

Add 4 cans tomato sauce Add 2 cans diced tomatoes OR add 1 large tomato juice, 2 large tomato puree, and 1 large tomato paste

Add back Fraboni's Garlic Sausage and beef. Can adjust tomato sauce as needed.

Cover and simmer 3-4 hours, stirring occasionally until beef falls apart. Serve over any type of noodle - we prefer Rigatoni or Alberto's Extra Wide Noodles.
